‘CA’ NOVA’ BIANCO WINE

This is the first wine to be solely cared for by the new generation of the Selmin family. Obtained from a blend of white grapes, it can be defined as a “semi-aromatic wine”. It was born with the desire to create a great wine capable of evolving and acquiring even more complexity over time thanks to long ageing in the bottle. Interesting to discover its evolution after 5-6 years; it surprised us with an evolved, soft, persuasive nose and palate.
Tasting notes

Lively straw-gold colour, but it is on the nose that it conquers for its complexity and expressive finesse. Mainly floral and fruity notes follow one another: ripe plum and prune, apricot, apple and a delicate hint of banana. This is followed by hawthorn and light hints of acacia and chamomile with a delicate finish reminiscent of sweet almond and delicate dill with slight hints of mineral.

The tasting reveals a multifaceted wine, dry, soft and pleasantly persistent and fresh.

Pairing

A wine that appeals for its flexibility in pairings. Pleasant as an aperitif with medium-aged cheeses and cured ham.

Good with velvety soups enriched with crispy bacon cubes and herbs.

Likes fish-based preparations. Excellent with salt cod, scallops au gratin or prawns in filo pastry. Also enjoyable with pork loin accompanied by sauces or veal and cheese wraps.
